Carne Asada

Carne asada means "grilled meat”. It is the most primal and basic forms of cooking.  The term "carne asada" is also a noun used in place of "cook-out”, or “social barbecue event” along the south Texas-Mexican border. Grilling meats and vegetables produces amazing flavors and textures that are accentuated by smoke and seasonings. Our Griller's Rub was born from carne asada, and blended to take advantage of the high heat environments the grill produces.   Typically, carne asada is a single zone cooking style with varied cook times for different cuts and meats.  Also, if your grill has a lid you can shut it during cooking. Doing so will add a slightly stronger smoke finish.  Because of the single zone cooking style, you have to get a feel for what meats to cook first. The picture above, for example, was all cooked over the same fire but staggering times for the meats.  In this case, the small short ribs, chicken, and pepper were put on the grill first; after about mid way through the cook time, we added the skirt steak. Soon thereafter it was followed by the sausage, and everything was finished cooking at about the same time.  This style is similar to a seafood boil, where hardy shellfish are first in and delicate shrimp are last to enter the pot.  This style produces charring, crispy textures, and a light smoky finish.
